Carrot

Carrots are one of the most popular vegetables in the world, loved for their sweet flavour, crunchy texture, and versatility in the kitchen. This colourful vegetable, often orange but also available in shades like purple, yellow, and white, is rich in nutrients. Carrots are an excellent source of beta-carotene (which the body converts into vitamin A), fibre, vitamin K, and antioxidants.

Buying and storing
When buying carrots, it’s important to choose firm, smooth ones without cracks or soft spots. Carrots with fresh, green tops are often the freshest.

Store carrots without the tops in the vegetable drawer of the fridge, where they will keep for up to two weeks. If you want to store carrots for longer, you can slice or dice them, blanch briefly, and freeze them. This way, they stay good for several months and are ready to use in soups and stews.

In the kitchen
Carrots are incredibly versatile and can be prepared in many different ways. Some popular uses include:

When preparing carrots, you can peel them or leave the skin on, depending on your preference. Most nutrients are just beneath the skin, so a thorough wash is often sufficient.
