
Carrot salad with vinaigrette
A classic Spanish carrot salad with a fresh vinaigrette. Perfect as a side dish or a light starter.

Ingredients:
- 4 large carrots
- 2 tbsp extra virgin olive oil
- 1 tbsp white wine vinegar
- 1 garlic clove
- Pinch of ground cumin
- Salt and pepper to taste
- Half a bunch of fresh parsley
Preparation:
- Peel and finely grate the carrots, place them in a large bowl.
- Peel and finely chop the garlic.
- Wash the parsley, remove the stems, and chop finely.
Instructions:
- Place the grated carrots in a large bowl.
- Whisk the olive oil, vinegar, garlic, cumin, salt and pepper into a dressing.
- Pour the dressing over the carrots and toss well.
- Garnish with fresh parsley and serve chilled.
