Calamares a la Andaluza
Andalusian-style fried squid is a classic Spanish tapa: simple, light and crispy. Serve immediately after frying with lemon wedges.

Ingredients
- 1 kilo squid rings
- 150 grams flour
- salt
- neutral frying oil, for frying
- 1 lemon
Preparation
- Pat the squid dry
Pat the squid rings dry thoroughly with kitchen paper. - Cut the lemon
Cut the lemon into wedges. - Prepare the flour
Put the flour in a large bowl.
Method
- Coat the squid
Coat the squid rings in the flour and shake off any excess flour well. - Heat the oil
Heat a generous layer of frying oil in a pan or deep-fat fryer to 180 °C. - Fry the squid
Fry the squid in small batches for 2 to 3 minutes, until the rings are lightly golden and crispy. Turn them halfway through if necessary. - Drain and serve
Remove the fried squid from the oil with a slotted spoon and drain briefly on kitchen paper. Sprinkle lightly with salt straight away. Serve immediately, with lemon wedges.
