Calamares a la Andaluza

Andalusian-style fried squid is a delicious tapa popular throughout Spain. Here’s an easy way to make it at home. Especially tasty served with aioli.

Ingredients:

  • 1 kg squid rings
  • 120 g flour
  • 2 teaspoons paprika
  • 3 teaspoons salt
  • Vegetable oil, for frying
  • 1 lemon

Method:

  1. In a large bowl, mix the flour, paprika, and salt. Toss the squid rings in the mixture and shake off the excess.
  2. Heat the vegetable oil in a large frying pan over medium heat.
  3. Fry the squid in batches, turning occasionally, until golden and crisp, about 2–3 minutes per batch.
  4. Remove with a slotted spoon and drain on paper towels.
  5. Cut the lemon into wedges and serve the fried squid hot with the lemon on the side.
