Calamares a la Andaluza

Andalusian-style fried squid is a classic Spanish tapa: simple, light and crispy. Serve immediately after frying with lemon wedges.

Ingredients

  • 1 kilo squid rings
  • 150 grams flour
  • salt
  • neutral frying oil, for frying
  • 1 lemon

Preparation

  1. Pat the squid dry
    Pat the squid rings dry thoroughly with kitchen paper.
  2. Cut the lemon
    Cut the lemon into wedges.
  3. Prepare the flour
    Put the flour in a large bowl.

Method

  1. Coat the squid
    Coat the squid rings in the flour and shake off any excess flour well.
  2. Heat the oil
    Heat a generous layer of frying oil in a pan or deep-fat fryer to 180 °C.
  3. Fry the squid
    Fry the squid in small batches for 2 to 3 minutes, until the rings are lightly golden and crispy. Turn them halfway through if necessary.
  4. Drain and serve
    Remove the fried squid from the oil with a slotted spoon and drain briefly on kitchen paper. Sprinkle lightly with salt straight away. Serve immediately, with lemon wedges.
