Pimientos de Padrón

These green peppers are not as spicy as they look. Pimientos de Padrón are usually mild, but full of flavour.

Ingredients:

  • 500 g Pimientos de Padrón
  • Generous splash of olive oil
  • Coarse sea salt

Method:

  1. Wash the Pimientos de Padrón and pat them dry.
  2. Heat the olive oil in a large pan over high heat.
  3. Add the peppers and fry for 5–7 minutes until blistered and browned on all sides.
  4. Season with coarse sea salt, let them cool slightly, and serve at room temperature.
