Lime Coconut Cookies

Crispy on the outside, fluffy on the inside: these lime coconut cookies are the perfect summer treat. Ideal with a glass of lemonade or a cup of tea.

Ingredients

  • 2 eggs
  • 125 g fine granulated sugar
  • 150 g shredded coconut (unsweetened)
  • 1 tsp vanilla extract
  • 1 lime
  • Pinch of salt

Preparation

  1. Preheat the oven to 175°C (top and bottom heat).
  2. Grate the lime.
  3. Line a baking tray with parchment paper.
  4. Separate the eggs: use only the egg whites. Make sure the bowl is grease-free.

Method

  1. Whisk the egg whites with a pinch of salt until stiff using a mixer.
  2. Gradually add the sugar while continuing to mix, until the mixture is glossy and forms stiff peaks.
  3. Gently fold in the coconut, lime zest, and vanilla extract.
  4. Add a bit of lime juice to taste for extra freshness.
  5. Using two spoons, place small mounds on the baking tray (about 12 cookies), leaving space between them.
  6. Bake the cookies for 12–15 minutes in the centre of the oven, until golden at the edges.
  7. Let them cool on the baking tray, then transfer to a wire rack to harden completely.
