
Lime Coconut Cookies
Crispy on the outside, fluffy on the inside: these lime coconut cookies are the perfect summer treat. Ideal with a glass of lemonade or a cup of tea.

Ingredients
- 2 eggs
- 125 g fine granulated sugar
- 150 g shredded coconut (unsweetened)
- 1 tsp vanilla extract
- 1 lime
- Pinch of salt
Preparation
- Preheat the oven to 175°C (top and bottom heat).
- Grate the lime.
- Line a baking tray with parchment paper.
- Separate the eggs: use only the egg whites. Make sure the bowl is grease-free.
Method
- Whisk the egg whites with a pinch of salt until stiff using a mixer.
- Gradually add the sugar while continuing to mix, until the mixture is glossy and forms stiff peaks.
- Gently fold in the coconut, lime zest, and vanilla extract.
- Add a bit of lime juice to taste for extra freshness.
- Using two spoons, place small mounds on the baking tray (about 12 cookies), leaving space between them.
- Bake the cookies for 12–15 minutes in the centre of the oven, until golden at the edges.
- Let them cool on the baking tray, then transfer to a wire rack to harden completely.
