Broccoli

Broccoli is a versatile vegetable known for its rich nutritional value and mild, fresh flavour. This vegetable, related to cauliflower, is perfect for steaming, stir-frying, boiling, or even eating raw in a salad. Broccoli is truly a kitchen all-rounder!

Broccoli is available all year round, but the best quality can be found in summer and autumn, when the growing season is at its peak. It is popular not only for its taste but also for its many health benefits, such as a high concentration of vitamins and antioxidants.

Buying and storing
When buying broccoli, look for a firm, green stalk and compact, dark to bright green florets. Avoid broccoli with yellow or soft spots, as these are signs that it is less fresh.

Store broccoli in the vegetable drawer of the fridge, where it will keep for about a week. Want to store it for longer? Blanch the florets briefly (1–2 minutes) and plunge them into ice water. After draining well, you can freeze the broccoli and keep it for several months.

In the kitchen
Broccoli can be prepared in countless ways. It is delicious in a stir-fry with garlic and ginger, steamed as a side dish, or pureed in a creamy soup. Raw broccoli in a fresh salad with a light dressing is also highly recommended.

When preparing broccoli, don’t throw away the stalk. It is just as nutritious and tasty as the florets. Lightly peel the stalk and slice it to boil, stir-fry, or eat raw.
