
Beef sausage with sweet potato
This warming oven dish with beef sausage, sweet potato and fragrant Dutch spice mix is perfect for autumn. Comfort food with a spicy twist!

Ingredients
- 4 beef sausages
- 2 to 3 large sweet potatoes
- 150 grams unsalted butter
- 1 bulb of garlic
- 3 teaspoons Dutch spiced cookie mix (koek- en speculaaskruiden)
- 2 teaspoons ground ginger
- 2 sprigs of rosemary
- Salt and pepper
Preparation
- Take the butter out of the fridge to soften.
- Peel the sweet potatoes and cut into large chunks.
- Cut the top off the garlic bulb.
- Roughly chop the rosemary.
Cooking
- Preheat the oven to 180°C.
- Melt a small knob of butter in a pan and brown the beef sausages all around. Then place them in a large oven dish.
- Spread the sweet potato chunks around the sausages in the dish.
- Place the whole garlic bulb in the centre of the dish.
- Make spiced butter by mixing the remaining butter with the Dutch spice mix, ground ginger, salt and pepper. Distribute over the dish.
- Add the chopped rosemary to the oven dish.
- Bake for 45 minutes until golden brown and fully cooked.
