Candied Sweet Potatoes

A tasty side dish — the combination of cinnamon, ginger and maple syrup is simply irresistible.

Serves: 4
Preparation time: 30 minutes

Ingredients:

  • 500 g sweet potatoes
  • 100 ml maple syrup
  • 2 tablespoons brown sugar
  • 1–2 cm fresh ginger
  • 1 lemon
  • 1 teaspoon ground cinnamon
  • 120 g butter
  • Pinch of nutmeg
  • Salt

Method:

  1. Preheat the oven to 200°C.
  2. Peel the sweet potatoes and slice them into rounds about 1 cm thick.
  3. Spread the slices in a shallow ovenproof dish.
  4. Grate the ginger and lemon zest. You won’t need the rest of the lemon.
  5. In a bowl, mix the butter with the lemon and ginger zest, brown sugar, and cinnamon.
  6. Spread the butter mixture over the potatoes, drizzle with maple syrup and season with a little salt and a pinch of nutmeg.
  7. Cover the dish with aluminium foil and bake for 30 minutes.
  8. Remove the foil and bake for another 15–20 minutes until tender and golden.
