Cebolada

This quick yet flavourful onion sauce is perfect with a thin slice of meat straight off the barbecue.

Total time: 20 min

Ingredients:

  • 4 onions
  • 2 cloves of garlic
  • 70 grams of tomato purée
  • 3 tablespoons of olive oil
  • 1 tablespoon of red wine vinegar
  • 1 teaspoon of paprika
  • 1 teaspoon of allspice
  • 50 ml of water
  • Salt and pepper

Method:

  1. Finely chop the onions and garlic. Heat the olive oil in a pan and gently fry the onions and garlic until they start to colour.
  2. Add the tomato purée and cook for another 2 minutes. Then add the remaining spices and the water.
  3. Stir everything together well and let it simmer gently for another 5 minutes.
