Jersey Breakfast

This dish is originally made with the famous Taylor's Pork Roll. In this version, we use grilled sausage instead.

Ingredients:

  • 8 thick slices of grilled sausage
  • 8 slices of cheddar cheese
  • 4 eggs
  • 4 crusty white tiger rolls
  • Salt and pepper
  • Butter for frying
  • Oil for frying

The sausage slices should cover the bun. If they’re smaller, use extra thick slices.

Equipment:

  • 2 frying pans
  • Oven

Method:

  1. Preheat the oven to 200°C.
  2. Slice the rolls in half and drizzle with a little oil. Season with salt and pepper. Toast in the oven, cut side up, until golden brown.
  3. Top the toasted halves with cheese and return to the oven until the cheese is fully melted.
  4. Heat a frying pan with a knob of butter. If the sausage slices are large, make small cuts around the edges to prevent curling. Fry on each side for 1–2 minutes until nicely browned. Remove and set aside.
  5. Fry the eggs in butter, keeping the yolks runny.
  6. Assemble the rolls with the grilled sausage and egg between the toasted halves. Serve warm.
