Monika Chicken Cocktail

A true classic from grandma's recipe book: the Monika chicken cocktail. This festive salad with tender chicken, creamy cocktail sauce, and sweet pineapple is irresistibly retro – and making a delicious comeback!

Ingredients (for 4 servings)

  • 2 chicken breasts
  • 100 ml mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon cognac or whisky
  • 1 teaspoon lemon juice
  • 1 teaspoon mustard
  • Pinch of salt
  • Pinch of pepper
  • 1 can of pineapple in juice
  • 4 lettuce leaves (butterhead or iceberg)
  • Optional: cocktail onions, peach pieces or a boiled egg

Preparation

  • Boil or grill the chicken breasts until cooked through. Let cool and cut into cubes.
  • Drain the pineapple and cut into pieces.

Instructions

  1. Make the cocktail sauce: mix mayonnaise, ketchup, cognac, lemon juice, mustard, salt and pepper into a smooth sauce.
  2. Add chicken and pineapple to the sauce and mix gently.
  3. Line glasses or small bowls with a lettuce leaf and spoon the mixture in.
  4. Optionally garnish with egg, cocktail onion or a slice of gherkin.
  5. Chill in the fridge for 15 minutes. Serve cold.
