Monika Chicken Cocktail

A true classic from grandma’s recipe book: the Monika chicken cocktail. This festive salad with tender chicken, creamy cocktail sauce and sweet pineapple was once a staple at weddings, buffets and birthday parties. Simple, quick and irresistibly retro – and in our opinion, it’s definitely making a comeback!

Ingredients:

  • 2 chicken breasts
  • 100 ml mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon cognac or whisky
  • 1 teaspoon lemon juice
  • 1 teaspoon mustard
  • Pinch of salt and pepper
  • 1 tin of pineapple in juice
  • 4 leaves of butterhead lettuce or iceberg lettuce
  • Optional: cocktail onions, peach pieces or a boiled egg

Preparation:

  1. Boil or grill the chicken breasts until fully cooked. Let them cool, then cut into cubes.
  2. Drain the pineapple and cut it into small pieces.

Method:

  1. Make the cocktail sauce: mix the mayonnaise, ketchup, cognac, lemon juice, mustard, salt and pepper in a bowl until smooth.
  2. Gently mix the chicken cubes and pineapple pieces into the sauce.
  3. Line glasses or small bowls with a lettuce leaf and spoon in the mixture.
  4. Garnish with a wedge of egg, a cocktail onion or a slice of gherkin for the ultimate retro look.
  5. Chill in the fridge for 15 minutes before serving. Serve cold!
