
Pickled Sweet & Sour Cauliflower
Sweet and sour pickled cauliflower is not only delicious but also adds colour and zing to any dish. Perfect with pâté, ham or as part of a snack platter.

Total time: 30 minutes + 1 day to mature
Ingredients
- 500 g cauliflower
- 250 ml white vinegar
- 125 g granulated sugar
- 1 star anise
- 1 cinnamon stick
- 1 tsp cumin seeds
- 1 tsp ground turmeric
- 1 tsp mustard seeds
- 1 garlic clove
- 2 bay leaves
Preparation
- Cut the cauliflower into small florets.
- Peel and thinly slice the garlic.
- Sterilise 2 jars if desired.
Instructions
- Place all ingredients except the cauliflower in a saucepan over high heat.
- Stir until the sugar is dissolved and bring to a boil.
- Reduce heat and simmer for 5 minutes.
- Add the cauliflower florets and cook for 3 minutes until just tender.
- Remove the star anise and cinnamon stick.
- Place 1 bay leaf in each jar and divide the cauliflower and liquid between the jars.
- Seal the jars tightly, let cool, and refrigerate for at least 1 day.
