White BBQ sauce

This creamy and spicy barbecue sauce from the southern US is a surprising alternative to the classic red version. Perfect with chicken, turkey, pulled pork or grilled vegetables.

Total time: 10 minutes + 30 minutes resting time

Ingredients

  • 200 g mayonnaise
  • 60 ml apple cider vinegar
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon horseradish
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Pinch of cayenne pepper or chilli flakes
  • Salt and freshly ground black pepper

Preparation

  • Measure out all the ingredients.
  • Squeeze the lemon juice and, if desired, grate fresh horseradish.
  • Have a clean, sealable jar or bottle ready to store the sauce.

Method

  1. Put the mayonnaise, apple cider vinegar and lemon juice in a mixing bowl and stir until smooth.
  2. Add the honey, Dijon mustard and horseradish and mix well.
  3. Season with garlic powder, onion powder, cayenne pepper, salt and black pepper.
  4. Taste and adjust the seasoning to your liking.
  5. Let the sauce rest in the fridge for at least 30 minutes so the flavours can develop.
  6. Serve cold as a dipping sauce, or use as a marinade or glaze for grilled meat or vegetables.
