Remoulade sauce
Remoulade sauce is a fresh and herby French classic, perfect with fish, potatoes or as a flavour booster in a sandwich. The combination of mustard, capers, gherkins and fresh herbs creates a full, refined taste.

Ingredients
- 200 ml mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon capers
- 2 gherkins
- 1 tablespoon fresh parsley
- 1 tablespoon fresh tarragon
- 1 teaspoon lemon juice
- 1 small shallot
- Salt and freshly ground black pepper
Preparation
- Finely chop the gherkins, capers, parsley, tarragon and the shallot.
Method
- Put the mayonnaise in a bowl and mix it with the Dijon mustard and lemon juice.
- Add the finely chopped gherkins, capers, shallot and herbs.
- Stir everything together carefully and season with salt and pepper.
- Let the remoulade sauce rest in the fridge for at least 15 minutes so the flavours can infuse well.
