Choriatiki

A Greek salad shows how important good-quality ingredients are. Ripe tomatoes, crisp cucumber, creamy feta and fragrant olive oil come together in a simple yet powerful salad that owes its flavour entirely to the quality of the ingredients.

Ingredients

  • 2 ripe tomatoes
  • 1 cucumber
  • 1 red onion
  • 150 g Kalamata olives (preferably with stones)
  • 1 block of feta (± 200 g)
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • Salt

Preparation

  • Wash the tomatoes and the cucumber.
  • Peel the red onion.

Method

  1. Cut the tomatoes into large wedges and the cucumber into thick slices or half-moons. Put in a large bowl.
  2. Slice the red onion into thin rings. Add to the salad along with the olives.
  3. Lightly sprinkle with salt and drizzle generously with the olive oil.
  4. Place the block of feta on top of the salad whole.
  5. Sprinkle the feta with the dried oregano and, if you like, drizzle a little more olive oil over it.
  6. Serve immediately, preferably with fresh bread. Toss the salad at the table so the feta stays intact.
