
Choriatiki
A Greek salad depends on the quality of the ingredients: the better the products, the better the salad. It may be simple, but it’s incredibly tasty.
Serves: 4
Preparation time: 15 min
Ingredients:
- 2 tomatoes
- 1 red onion
- 1 cucumber
- 1 tablespoon lemon juice
- 3 tablespoons extra virgin olive oil
- 1 teaspoon dried oregano
- Salt and pepper
- 150 g black olives
- Block of feta cheese
Instructions:
- Wash the cucumber and tomatoes. Slice the cucumber into half-moons and quarter the tomatoes. Place in a bowl.
- Peel the onion and slice into rings. Add to the bowl with the black olives.
- In a small bowl, whisk together the olive oil and lemon juice. Add oregano and season to taste.
- Reserve 2 teaspoons of the dressing and pour the rest over the salad. Toss gently.
- Cut the block of feta into large wedges, place on top of the salad, and drizzle with the remaining dressing.
