Choriatiki

A Greek salad depends on the quality of the ingredients: the better the products, the better the salad. It may be simple, but it’s incredibly tasty.

Serves: 4
Preparation time: 15 min

Ingredients:

  • 2 tomatoes
  • 1 red onion
  • 1 cucumber
  • 1 tablespoon lemon juice
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper
  • 150 g black olives
  • Block of feta cheese

Instructions:

  1. Wash the cucumber and tomatoes. Slice the cucumber into half-moons and quarter the tomatoes. Place in a bowl.
  2. Peel the onion and slice into rings. Add to the bowl with the black olives.
  3. In a small bowl, whisk together the olive oil and lemon juice. Add oregano and season to taste.
  4. Reserve 2 teaspoons of the dressing and pour the rest over the salad. Toss gently.
  5. Cut the block of feta into large wedges, place on top of the salad, and drizzle with the remaining dressing.
