Choriatiki
A Greek salad shows how important good-quality ingredients are. Ripe tomatoes, crisp cucumber, creamy feta and fragrant olive oil come together in a simple yet powerful salad that owes its flavour entirely to the quality of the ingredients.
Serves: 4
Preparation: -
Cooking: approx. 15 minutes
Total time: approx. 15 minutes
Ingredients
- 2 ripe tomatoes
- 1 cucumber
- 1 red onion
- 150 g Kalamata olives (preferably with stones)
- 1 block of feta (± 200 g)
- 3 tablespoons extra virgin olive oil
- 1 teaspoon dried oregano
- Salt
Preparation
- Wash the tomatoes and the cucumber.
- Peel the red onion.
Method
- Cut the tomatoes into large wedges and the cucumber into thick slices or half-moons. Put in a large bowl.
- Slice the red onion into thin rings. Add to the salad along with the olives.
- Lightly sprinkle with salt and drizzle generously with the olive oil.
- Place the block of feta on top of the salad whole.
- Sprinkle the feta with the dried oregano and, if you like, drizzle a little more olive oil over it.
- Serve immediately, preferably with fresh bread. Toss the salad at the table so the feta stays intact.
