
Courgette & chorizo skewers
These simple yet flavourful skewers combine the fresh tenderness of courgette with the spicy, smoky richness of chorizo. Perfect for the barbecue.

Ingredients (serves 4)
- 1 courgette
- 100 grams of chorizo
- 1 red bell pepper
- Olive oil
- 1 teaspoon paprika powder
- 1 tablespoon oregano
- Salt and pepper to taste
Preparation
- Cut the courgette into half-moons or slices.
- Cut the pepper into large pieces.
- Slice the chorizo into pieces about 1 cm thick.
- Make a marinade of olive oil, paprika powder, oregano, salt and pepper, and mix it with the courgette and pepper.
- Skewer the courgette, chorizo, pepper, and optionally onion alternately onto skewers.
Cooking
- Preheat the barbecue until it is very hot.
- Grill the skewers for 8–10 minutes, turning regularly until the vegetables are soft and the chorizo slightly crispy.
