Courgette & chorizo skewers

These simple yet flavourful skewers combine the fresh tenderness of courgette with the spicy, smoky richness of chorizo. Perfect for the barbecue.

Ingredients (serves 4)

  • 1 courgette
  • 100 grams of chorizo
  • 1 red bell pepper
  • Olive oil
  • 1 teaspoon paprika powder
  • 1 tablespoon oregano
  • Salt and pepper to taste

Preparation

  • Cut the courgette into half-moons or slices.
  • Cut the pepper into large pieces.
  • Slice the chorizo into pieces about 1 cm thick.
  • Make a marinade of olive oil, paprika powder, oregano, salt and pepper, and mix it with the courgette and pepper.
  • Skewer the courgette, chorizo, pepper, and optionally onion alternately onto skewers.

Cooking

  1. Preheat the barbecue until it is very hot.
  2. Grill the skewers for 8–10 minutes, turning regularly until the vegetables are soft and the chorizo slightly crispy.
