Lovage celery salt

A powerful herb salt reminiscent of classic bouillon, ideal for mashed dishes, soups, or roasted vegetables. Rich in natural umami without artificial additives.

Ingredients

  • 100 g Himalayan salt
  • 10 g dried lovage leaves
  • 1 teaspoon celery seeds
  • 1 teaspoon onion powder
  • 1 bay leaf
  • Pepper to taste

Preparation

  • Allow fresh lovage to air dry completely or use a dehydrator (max. 40 °C).
  • Crumble the bay leaf and roughly chop large pieces of lovage before grinding.

Method

  1. Combine all ingredients in a food processor or mortar and pestle.
  2. Grind to a coarse or medium-fine salt, depending on desired use. Omit salt for a coarse blend.
  3. If needed, allow to dry further on baking paper to prevent clumping.
  4. Store in a well-sealed jar, away from light.
