
Strawberry & Ibérico cheese salad

Ingredients
- 200 grams strawberries
- 100 grams Iberico cheese
- 75 grams lamb’s lettuce or rocket
- 1 handful of walnuts or pecans
- a few sprigs of fresh chives
- a few sprigs of fresh mint
- a few sprigs of dill (fresh or dried)
- 1 tablespoon balsamic vinegar
- 1 tablespoon liquid honey
- 3 tablespoons extra virgin olive oil
- freshly ground black pepper
Preparation
- Wash the strawberries, remove the stems and quarter them.
- Toast the nuts in a dry pan until lightly browned and fragrant.
- Chop the fresh herbs finely.
- Whisk together a dressing of balsamic vinegar, honey, olive oil, herbs, salt, and pepper.
Cooking
- Distribute the lettuce over four plates or a large serving dish.
- Arrange the strawberries and Iberico cheese evenly on top.
- Sprinkle the nuts over the salad.
- Drizzle everything with the herb dressing and serve immediately, optionally with crusty bread.
