Strawberry & Ibérico cheese salad

This colourful salad combines the sweetness of strawberries with the savoury taste of Iberico cheese and a fresh herb dressing. Perfect for a sunny lunch.

Ingredients

  • 200 grams strawberries
  • 100 grams Iberico cheese
  • 75 grams lamb’s lettuce or rocket
  • 1 handful of walnuts or pecans
  • a few sprigs of fresh chives
  • a few sprigs of fresh mint
  • a few sprigs of dill (fresh or dried)
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon liquid honey
  • 3 tablespoons extra virgin olive oil
  • freshly ground black pepper

Preparation

  • Wash the strawberries, remove the stems and quarter them.
  • Toast the nuts in a dry pan until lightly browned and fragrant.
  • Chop the fresh herbs finely.
  • Whisk together a dressing of balsamic vinegar, honey, olive oil, herbs, salt, and pepper.

Cooking

  1. Distribute the lettuce over four plates or a large serving dish.
  2. Arrange the strawberries and Iberico cheese evenly on top.
  3. Sprinkle the nuts over the salad.
  4. Drizzle everything with the herb dressing and serve immediately, optionally with crusty bread.
