
Waldorf Salad
This is one of the oldest known salads, created by Oscar Tschirky in 1896 at the Waldorf-Astoria Hotel in New York.
Ingredients:
- 2 Granny Smith apples
- 2 Delicious apples
- ½ lemon
- 160 g raisins
- 160 g walnuts
- 2 celery stalks
- 4 tablespoons mayonnaise
- 2 tablespoons sugar
- ½ head of lettuce
- 10 maraschino cherries
Method:
- Soak the raisins in a bowl of lukewarm water for 10 minutes, then drain well.
- In a bowl, mix the mayonnaise, 1 tablespoon sugar, and juice from the half lemon. Whisk well.
- Wash the apples, remove the cores and slice into thin strips.
- Wash the celery, reserve the leaves for garnish, and slice into thin half-moons.
- In a large bowl, mix the celery, apples, raisins, and walnuts.
- Add the mayonnaise mixture and stir until well combined.
- Refrigerate the salad for at least 30 minutes to let the flavours meld.
- Wash the lettuce and arrange the leaves on plates or bowls. Spoon the salad on top.
- Cut the maraschino cherries in half and garnish the salad with celery leaves.
