
Asian cucumber salad
An easy side dish that pairs wonderfully with Asian dishes and meat skewers from the barbecue.

Ingredients:
- 1 cucumber
- 2 tablespoons rice vinegar
- 2 tablespoons soy sauce (ketjap)
- 1 tablespoon ginger syrup
- Handful of roasted cashew nuts
Instructions:
- Slice the cucumber into long ribbons using a vegetable peeler or cheese slicer.
- Whisk the rice vinegar, soy sauce, and ginger syrup together in a small bowl to make the dressing.
- Roughly chop the cashew nuts.
- Mix everything together just before serving to keep the cucumber fresh and crisp.
