Asian cucumber salad

An easy side dish that pairs wonderfully with Asian dishes and meat skewers from the barbecue.

Ingredients:

  • 1 cucumber
  • 2 tablespoons rice vinegar
  • 2 tablespoons soy sauce (ketjap)
  • 1 tablespoon ginger syrup
  • Handful of roasted cashew nuts

Instructions:

  1. Slice the cucumber into long ribbons using a vegetable peeler or cheese slicer.
  2. Whisk the rice vinegar, soy sauce, and ginger syrup together in a small bowl to make the dressing.
  3. Roughly chop the cashew nuts.
  4. Mix everything together just before serving to keep the cucumber fresh and crisp.
