Souvláki kotópoulo
The word souvlaki literally means “meat on a skewer”. In Greece, this is one of the most beloved street food dishes. This classic version is marinated with lemon, olive oil, garlic and oregano, then grilled until the meat is juicy and lightly crisp.

Ingredients
- 4 chicken breasts
- 1 lemon (zest and juice)
- 2 cloves of garlic
- 4 tablespoons extra virgin olive oil
- 2 tablespoons dried oregano
- Salt and freshly ground black pepper
Preparation
- Zest the lemon and squeeze out the juice. Put the zest and juice in a large bowl and mix with the olive oil, oregano, pepper and salt.
- Peel the garlic, finely chop it and add to the marinade.
- Cut the chicken breast into cubes of approx. 3–4 cm. Add to the marinade and mix everything well.
- Cover the bowl and marinate the chicken in the fridge for at least 90 minutes.
- Take the chicken out of the fridge 30 minutes before cooking and thread the pieces onto skewers.
Method
- Grill the souvlaki on the barbecue or in a griddle pan over medium-high heat until cooked through, about 12–15 minutes. Turn regularly until golden brown and lightly caramelised.
