
Souvláki kotópoulo
The word souvlaki simply means “meat on a skewer”. In Greece, they love it and make versions with lamb, beef, and chicken. Serve it with a bit of tzatziki, some salad, and your meal is complete.

Ingredients:
- 4 chicken breasts
- 1 lemon
- 2 tablespoons fresh mint
- 2 cloves garlic
- 4 tablespoons olive oil
- 2 tablespoons dried oregano
- 1 teaspoon ground cumin
- Salt and pepper
Instructions:
- Grate and juice the lemon into a large bowl. Add the olive oil, oregano, and cumin. Season with salt and pepper and mix well.
- Peel and finely chop the garlic. Wash and finely chop the mint leaves. Add both to the bowl.
- Cut the chicken breasts into cubes of about 4 cm. Add to the marinade and mix well. Cover and refrigerate for at least 90 minutes.
- Remove from the fridge 30 minutes before cooking. Thread the chicken onto skewers.
- For best results, cook the skewers on a barbecue.
