Souvláki kotópoulo

The word souvlaki simply means “meat on a skewer”. In Greece, they love it and make versions with lamb, beef, and chicken. Serve it with a bit of tzatziki, some salad, and your meal is complete.

Cooking: 15 min

Ingredients:

  • 4 chicken breasts
  • 1 lemon
  • 2 tablespoons fresh mint
  • 2 cloves garlic
  • 4 tablespoons olive oil
  • 2 tablespoons dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper

Instructions:

  1. Grate and juice the lemon into a large bowl. Add the olive oil, oregano, and cumin. Season with salt and pepper and mix well.
  2. Peel and finely chop the garlic. Wash and finely chop the mint leaves. Add both to the bowl.
  3. Cut the chicken breasts into cubes of about 4 cm. Add to the marinade and mix well. Cover and refrigerate for at least 90 minutes.
  4. Remove from the fridge 30 minutes before cooking. Thread the chicken onto skewers.
  5. For best results, cook the skewers on a barbecue.
