Chorizo al vino

Chorizo al vino

This dish consists of sliced chorizo sausage cooked in red wine and served warm as an appetiser or tapa. The chorizo is gently simmered in the wine until fully cooked and the wine has reduced into a thick, flavourful sauce.

Serves: 4
Preparation time: 20 min
Marinating: 2 hours

Ingredients:

  • 400 grams of chorizo sausage
  • 200 ml Spanish red wine
  • 2 teaspoons fennel seeds
  • 2 teaspoons cinnamon
  • A few sprigs of chives
  • A splash of olive oil

Preparation method:

  1. Slice the sausage into pieces about 1 cm thick. Heat the olive oil in a pan and fry the slices for 1 minute on each side.
  2. Add the fennel seeds and cinnamon and fry for another 30 seconds. Deglaze the pan with the red wine.
  3. Let it simmer for around 15 minutes until the wine starts to thicken slightly.
  4. Remove from the heat and let it marinate for at least 2 hours.
  5. Before serving, sprinkle some finely chopped chives over the sausage.
