Lemon & Honey Chicken
The marinade in this recipe ensures the chicken thigh stays juicy during grilling. The acidity of the lemon helps the flavours quickly penetrate the meat, while the honey creates beautiful grill marks and a lightly caramelised exterior. By brushing the marinade on in thin layers while grilling, you get maximum flavour and colour without the honey burning.

Ingredients
- 4 boneless chicken thighs
- 1 lemon
- 2 tablespoons honey
- 2 tablespoons dried oregano
- Salt
- Freshly ground black pepper
Preparation
- Squeeze the lemon into a bowl and mix the juice with the honey until dissolved.
- Spoon about â…“ of the marinade into a separate bowl and set it aside, covered.
- Season the chicken thighs with oregano, salt and pepper.
- Place the chicken in the bowl with the remaining marinade and press lightly so all pieces are in good contact with the marinade.
- Marinate for at least 30 minutes. If you wait longer, place the bowl in the fridge.
Method
- Light the barbecue and make sure it is nice and hot.
- Place the chicken thighs on the grill. Use tongs: the honey can cause flare-ups.
- Grill the chicken for a total of 15–20 minutes, turning the pieces regularly.
- Brush the chicken every 2 minutes with the reserved marinade, using a pastry brush.
- The chicken is cooked when it is nicely caramelised and feels firm.
