
Beetroot
Beetroot is a versatile vegetable with a deliciously sweet, earthy flavour. It can be prepared in many ways: raw in a salad, cooked as a side dish, or even grilled on the barbecue. Beets are harvested in three seasons and are available year-round, often pre-cooked in stores.
Buying and Storing
When buying beetroot, choose firm bulbs without soft spots or blemishes. If the leaves are still attached, they should look fresh and green.
Store raw beets in a cool, dark place such as a cellar or the vegetable drawer of your fridge. They will keep for several weeks. Cooked beets can be stored in the fridge for up to a week or frozen for longer shelf life.
In the Kitchen
Beetroot is easy to prepare and incredibly versatile. Use it raw in salads, boil it as a side dish, or roast it in the oven for a more intense flavour. Beetroot pairs wonderfully with goat cheese, walnuts, and a honey dressing. Try beetroot juice or beet crisps for a creative twist.
When handling raw beets, it’s a good idea to wear gloves to avoid staining your hands. Wash and peel them thoroughly before use.
