Indian cuisine is rich, aromatic and wonderfully varied. Herbs and spices play a central role, but always in combination with pure ingredients such as rice, pulses, vegetables, yoghurt, bread, meat or fish. From creamy curries and fragrant rice dishes to dal, chutneys and tandoori dishes, India has an enormous culinary tradition with strong regional differences.
