Maize and polenta

Maize is a versatile grain used around the world in both savoury and sweet preparations. You find it as whole maize kernels, cornmeal, maize flour, tortillas, popcorn and, of course, polenta. Its flavour is mild, slightly sweet and distinctive, which makes maize well suited to simple side dishes, stews, soups, oven-baked dishes and bread-like preparations.
