
Potato
The potato originates from South America and, along with rice, wheat and maize, is one of the world's staple foods. There are nearly 4,000 different potato varieties worldwide.
Broadly speaking, there are two types of potatoes: waxy and floury. Waxy potatoes retain their firmness during cooking and are suitable for salads, chips and rösti. Floury potatoes, also known as starchy or mealy, fall apart after cooking and are ideal for mashing and making mash dishes.

Huge variety
The selection of potatoes in shops is enormous. Many varieties are available all year round, while some are seasonal. Baby potatoes are young, small potatoes often available from June. These have a very thin skin and are best eaten with the skin on.
Buying and storing
When buying potatoes, check that they are nice and firm. Older potatoes are softer and less tasty. Store potatoes in a dry, cool place — not in the fridge.
