Kir Royal
A Kir Royale is one of the simplest French aperitifs: chilled champagne, a touch of crème de cassis, and nothing else. Ideal for starting a dinner in a festive yet classic and understated way.

Ingredients
- 4 cl crème de cassis
- 36–40 cl well-chilled brut champagne
Preparation
- Put the champagne in the fridge at least a few hours in advance so it is properly cold.
- Place the champagne flutes in the fridge for 15–30 minutes so the glasses are chilled too.
Method
- Pour about 1 cl of crème de cassis into each chilled champagne flute.
- Top up each glass slowly with 9–10 cl of cold champagne. Hold the glass at a slight angle and pour down the side so the mousse stays nice.
- Do not stir: the drink will mix on its own as the bubbles rise.
- Serve the Kir Royale immediately, ice-cold, as a classic French aperitif.
