Borage

Sometimes herbs are not only delicious, but also truly beautiful. Borage, also known as cucumber herb, has it all.

Latin name: Borago officinalis
Height: 45–90 cm
Flowering period: early to late summer
Life cycle: 1 year

Description:
Borage originates from the Mediterranean region. It has since spread across Europe and can be found in fields and along roadsides. It is an herb that was described and used long ago by the Romans. Borage combines the qualities of a culinary herb with the charm of an ornamental plant in a pot.

In the kitchen
Both the leaves and the flowers are edible. As the name cucumber herb suggests, both the leaves and flowers taste like cucumber. The flowers in particular can brighten up even the plainest salad into something truly lovely.

In the herb garden
Borage is an annual plant that is easy to grow in a pot. The plant needs sufficient water. The best approach is to sow a new pot every 4 to 6 weeks, allowing you to enjoy fresh young leaves throughout the summer.
