Guacamole
A simple, classic guacamole with ripe avocado, lime, coriander, onion and a little kick. Perfect with tortilla chips, tacos or as a fresh sauce with grilled meat.

Ingredients
- 3 ripe avocados (medium)
- 1 small white onion or shallot, very finely chopped
- 1 small ripe tomato, deseeded, cut into small dice (optional)
- 1 small green chilli (e.g. jalapeño), very finely chopped
- ½ bunch of coriander (about 10 g), roughly chopped
- Juice of 1 lime (to taste)
- Sea salt, to taste
Preparation
- Chop the onion as finely as possible.
- Remove the seeds and pith from the chilli if you want the guacamole less spicy, and chop the chilli very finely.
- Wash the coriander, shake or pat dry well and roughly chop.
- Cut the tomato into quarters, remove the seeds and dice the flesh (if using tomato).
Method
- Halve the avocados and scoop out the flesh
Halve the avocados, remove the stone and scoop the flesh into the mixing bowl with a spoon. - Roughly mash the avocado
Roughly mash the avocado with a fork or masher. It can keep a rustic, lightly textured consistency; it doesn’t need to become a smooth purée. - Add the lime juice
Squeeze the juice of the lime over the avocado and mix briefly. This adds flavour and prevents discolouration. - Stir in the flavourings
Add the onion, chilli, coriander and, if using, the diced tomato. Gently mix everything together. - Season the guacamole
Taste and season with sea salt. If you like, add a little extra lime juice or chilli. - Serve the guacamole
Serve the guacamole straight away, or cover and chill briefly until needed.
