
Pumpkin soup
Super healthy and absolutely delicious: pumpkin soup is surprisingly easy to make yourself. Ideal for the autumn season!

Ingredients
- 1.2 to 1.4 kg pumpkin (unpeeled)
- 1 onion
- 2 garlic cloves
- 750 ml vegetable or chicken stock
- 250 ml water
- Salt and pepper
- Dash of cooking cream
- Basil
Preparation
- Peel the pumpkin, halve it and remove the seeds. Cut into cubes.
- Finely chop the onion.
- Finely chop the garlic.
Method
- Bring the stock and water to a boil in a pan. Add the pumpkin, onion and garlic.
- Simmer for 15 minutes until the pumpkin is soft.
- Blend the soup until smooth using a blender or food processor.
- Reheat and season with salt and pepper.
- Serve with a dash of cream and some fresh basil.
