Pumpkin soup

Super healthy and absolutely delicious: pumpkin soup is surprisingly easy to make yourself. Ideal for the autumn season!

Ingredients

  • 1.2 to 1.4 kg pumpkin (unpeeled)
  • 1 onion
  • 2 garlic cloves
  • 750 ml vegetable or chicken stock
  • 250 ml water
  • Salt and pepper
  • Dash of cooking cream
  • Basil

Preparation

  1. Peel the pumpkin, halve it and remove the seeds. Cut into cubes.
  2. Finely chop the onion.
  3. Finely chop the garlic.

Method

  1. Bring the stock and water to a boil in a pan. Add the pumpkin, onion and garlic.
  2. Simmer for 15 minutes until the pumpkin is soft.
  3. Blend the soup until smooth using a blender or food processor.
  4. Reheat and season with salt and pepper.
  5. Serve with a dash of cream and some fresh basil.
