Carrot and orange salad

This fresh carrot and orange salad is light, aromatic and simple in composition. Coarsely grated carrot is mixed with orange segments, a gentle citrus dressing, a little honey, cinnamon and fresh mint. The salad works well as a side dish with grilled fish, chicken or a light lunch with bread.

Ingredients

  • 3 large carrots
  • 1 large orange
  • 2 tablespoons extra virgin olive oil
  • Juice of ½ lemon
  • 1 teaspoon honey
  • 1 pinch ground cinnamon
  • Salt, to taste
  • A few sprigs of fresh mint

Preparation

  1. Peel the orange
    Cut off the top and bottom of the orange with a sharp knife. Then cut away the peel and white pith all around.
  2. Cut out the orange segments
    Cut the orange segments out from between the membranes over a bowl, so that the juice is collected. Keep both the segments and the released juice.
  3. Grate the carrots
    Peel the carrots and remove any hard ends. Coarsely grate the carrots into a large bowl.
  4. Chop the mint
    Wash the mint, shake dry and finely chop the leaves.

Method

  1. Mix the salad
    Add the orange segments to the bowl with the grated carrot and mix gently.
  2. Make the dressing
    Put the olive oil in a small bowl. Add the collected orange juice, the lemon juice, the honey and a pinch of cinnamon. Whisk with a fork or small whisk until you have a cohesive dressing. Season with salt and taste the balance of sour, sweet and salty.
  3. Finish the salad
    Pour the dressing over the carrot and orange. Mix gently but thoroughly, so that the dressing is evenly distributed. Leave the salad to stand for 5 to 10 minutes if desired, so the flavours can mingle.
  4. Add the mint
    Sprinkle the finely chopped mint over the salad just before serving and mix briefly once more, or use some of the mint as a garnish.
  5. Serve the salad
    Serve the carrot and orange salad chilled or at room temperature, in a wide dish or on small plates. The salad goes well with grilled chicken, fish or a simple lunch with crusty bread.
