Chive butter
Chive butter is a simple herb butter with a fresh, mild onion flavour. This butter goes well with bread, boiled potatoes, grilled vegetables, fish and meat.

Ingredients
- 150 g unsalted butter
- 3 tbsp finely chopped chives
- 1 tsp lemon juice, optional
- fine sea salt
- black pepper
Preparation
- Take the unsalted butter out of the fridge in good time so that it can soften.
- Wash the chives and pat them dry thoroughly.
- Chop the chives very finely.
Method
- Place the softened butter in a bowl
Place the softened butter in a bowl. - Add the chives and lemon juice
Add the chives and the lemon juice, if using. - Season to taste
Season to taste with fine sea salt and black pepper. - Stir well
Stir everything well until the chives are evenly distributed through the butter. - Shape the butter
Spoon the butter onto a piece of baking paper or cling film and shape it into a log, or place it in a small dish. - Chill the chive butter until firm
Chill the chive butter in the fridge for at least 30 minutes until firm. - Serve at room temperature
Serve at room temperature.
Storage
Store the chive butter well covered or wrapped in the fridge. Preferably use within 3 to 4 days.
Note
For a fresher version, you can add a small amount of finely grated lemon zest.
