Blue cheese dressing
A creamy dressing made with blue cheese, soured cream and mayonnaise, with a fresh touch of lemon. The bold cheese flavour pairs well with steak, chicory and crisp salad leaves.
Yield: approximately 200 ml dressing

Ingredients
- 100 g blue cheese
- 2 tablespoons soured cream
- 2 tablespoons mayonnaise
- 1 tablespoon fresh lemon juice
- freshly ground black pepper
- salt, if needed
Preparation
- Crumble the cheese
Crumble the blue cheese into small pieces. - Squeeze the lemon
Squeeze enough lemon to obtain 1 tablespoon of fresh lemon juice.
Method
- Mix the base
Place the blue cheese, soured cream and mayonnaise in a bowl. Mix with a fork or whisk until you have a creamy dressing with small pieces of cheese still visible. - Add the lemon juice
Stir the lemon juice into the dressing until fully incorporated. - Season to taste
Add freshly ground black pepper. Taste the dressing and add a small amount of salt only if needed. - Serve the dressing
Serve the blue cheese dressing immediately or keep it covered in the fridge until needed.
